HOW TO MAKE GROUNDNUT AND COCONUT CANDY

Ingredients

1 teaspoon of butter or margarine

11/2 teaspoons of baking soda

½ cup of water

½ cup of corn syrup

11/2 cups of raw groundnut (peanuts)

½ cup of grated coconut

1 teaspoon of vanilla flavor

Directions to prepare

1. Mix butter and soda together in a bowl, then set aside.

2. Mix and boil sugar, water and syrup In a large pan to hardball stage, about 254° F

3. Add groundnuts and grated coconut, stir in gently for 5 minutes or until slightly brown or yellow.

4. Remove from heat, then add butter and soda mixture.

5. While mixture is still hot, pour out into a greased cookie sheet (you can use a tray made of stainless steel) and pat or spread it out with the back of a greased spoon into desired thickness.

6. Let it cool, then break into pieces, your groundnut candy is ready for consumption.

Note: You might not get a desired shape.
